Trend Publikasi Penelitian Produk Bebas Gluten

Penelitian ini menganalisis tren publikasi terkait produk bebas gluten menggunakan metode sistematisasi literatur dari 2013 hingga 2023. Data dikumpulkan dari Google Scholar dengan perangkat lunak Publish or Perish dan dianalisis menggunakan VOSviewer. Hasilnya menunjukkan peningkatan signifikan dalam publikasi, dengan total 200 dokumen dalam 10 tahun terakhir. Analisis bibliometrik mengidentifikasi jejaring kata kunci utama seperti diet bebas gluten, tepung mocaf, dan roti bebas gluten. Beberapa artikel dengan sitasi terbanyak memberikan wawasan tentang topik penelitian dominan. Studi ini memberikan pandangan komprehensif tentang perkembangan penelitian produk bebas gluten, mencakup aspek kesehatan, nutrisi, dan teknologi. Temuan ini bermanfaat bagi pengambil kebijakan, peneliti, dan produsen makanan untuk memahami kebutuhan pasar dan mengembangkan produk bebas gluten yang lebih baik di masa mendatang.
